Turkmen scientist patented technology for the production of melon chips

The head of the laboratory of the Center for Technology of the Academy of Sciences of Turkmenistan, Mered Hudayberdiyev, received a patent for the production of melon chips from the State Intellectual Property Service.

According to the publication “Turkmenistan: Golden Age”, the method of making chips includes pre-treatment of melons - peeling, horizontal division, peeling, cutting into rings of the same size with a thickness of 0,7-0,8 centimeters.

Then the product is treated with ascorbic acid to reduce alkalinity and prevent the growth of microbacteria.

During the drying process, free and bound moisture is removed in three stages.

The proposed method is aimed at improving the quality of biologically active substances, improving the presentation, ensuring long-term storage and meeting the demand of the consumer market for the product.
